POTATO LEEK ZUCCHINI SOUP



IN A FRENCH OVEN
1 TBSP SALTED BUTTER
1 TBSP OLIVE OIL
ADD 3 CHOPPED LEEKS
SAUTE OVER MEDIUM HEAT
ADD 3 CUPS OF CHOPPED DUTCH POTATOES
ADD 2 CHOPPED ZUCCHINIS
ADD 1.5 QUARTS ORGANIC CHICKEN BROTH
ADD SEA SALT + PEPPER
BRING TO BOIL
LOWER HEAT, COVER + SIMMER 25 MINUTES
PUREE IN BATCHES
STIR IN 2 TBSP HEAVY CREAM
SERVE WITH FRESH CHIVES + JULIENNED ZUCCHINI
